Badam Halwa Recipe

Ingredients: Almonds - 600 gm, soaked for 5 hours, blanched Full fat milk - 1.2 litres Ghee - 12 Tablespoons Sugar - 12 Tablespoons Cardamom powder - 2 teaspoons Edible silver foil - 4 sheets Method for "Badam Halwa" Put the almonds in a food processor with half of the milk. Grind to a paste adding more milk, in small amounts at a time, until all the milk is used up. Heat the ghee in a heavy pan and add the almond paste. Fry over a low heat until it begins to stick. Add the sugar and stir well. Cook until the ghee separates and the fudge is well blended. Take off the heat and add the cardamom powder. Stir well and pour onto a neat dish. When it is almost cool cut it into fancy shapes and decorate with edible silver foil Badam Kheer Recipe: Ingredients: Almonds (Badam) 1 cupMilk 4-6 cupsSugar same amount as almond paste (about 1 cup)Saffron 1/2 t.spoonKesari powder (color) a small pinch (optional) Recipe Method Soak saffron in little cold milk, and keep it aside.Soak almonds in hot water for 1 hour. Peel skin and grind the almond into a fine paste with 1 cup of milk instead of water.Measure the amount of almond paste, and keep the same amount ofsugar aside.Cook the almond paste for 5-10 while stirring it constantly, till the flavour comes out. Now add sugar and keep stirring. Add the remaining milk, and boil for 10-15 minutes. Add the soaked saffron and serve it cold..
